Ms. Pelkmans graduated from the Groningen University in the Netherlands with a Degree in Corporate, Public and Environmental Law. She started her career as lawyer at NautaDutilh followed by 22 years at Unilever in various Legal, General Counsel and Board roles. Within Deloitte Simone co-leads the Digital Regulations team, focusing on Data and AI legislation and she is also a core member of the Future of Food team in which she helps clients to navigate all legislation coming from the Green Deal.
